SENIOR RESTAURANT MANAGER

Vue Rooftop have an opening to serve as the Senior Manager.  This will be a hands on, working position, that will require the successful candidate to be present during most weekend nights of the year when our volume is known for being quite high. The successful candidate will work alongside an experienced executive chef, food & beverage director, and hotel general manager to ensure guest expectations and profitability goals are met or exceeded. 

Job Tasks Include but not limited to:

  • Oversees execution of superior quality of restaurant operations to provide each guest an outstanding experience.

  • Monitors the recruitment, hiring, training, development and orientation of all employees.

  • Reviews/writes schedules for employees/management to ensure labor is within budgeted amounts and will meet guest demands.

  • Oversees and ensures compliance with safety training and programs such as MSDS status, lock out tag out, safety committees, blood-borne pathogens, prevention, fire/tornado procedures and general safety. 

  • Holds weekly staff meetings to ensure regular and consistent communication.

  • Monitors and understands the local market and competitive trends that affect business unit performance.

  • Confers with food preparation personnel to plan menus and related activities such as dining room and bar.

  • Inspects food and food preparation to maintain quality standards and sanitation regulations.

  • Investigates and resolves food quality and service complaints to ensure guest satisfaction.

  • Ensures accurate and timely inventories and prevents excess waste.

SOUS CHEF

Vue Rooftop has an opening for an experienced cook to serve as our Sous Chef.  Current Sous Chefs are encouraged to apply, and we are also willing to bring on board an experienced line cook who is passionate about growing their career in the kitchen.  This person will learn to cook on the line in Vue Rooftop Restaurant & Bar and also assist with cooking for banquet functions occurring in the Hilton Garden Inn itself. 

Job Tasks Include but not limited to:

  • Observes workers engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking and garnishing and sizes of portions are as prescribed.

  • Trains and develops workers in specific job, safety, guest satisfaction and KHC/franchise policies/procedures.

  • Assists the Kitchen Manager in inventorying and purchasing food, restaurant and kitchen supplies per purchasing guidelines.

  • Assists the Kitchen Manager in menu development, controlling labor and food costs.

  • Gives instructions to cooking personnel in methods of cooking.

  • Cooks and carves meats, and prepares dishes, such as sauces, during rush periods and for banquets and other social functions.

  • Monitors food quality and presentation to ensure guest satisfaction and franchise standards.

  • Assumes responsibility for kitchen in absence of Kitchen Manager.

Vue Rooftop has an opening for an experienced Grill Cook or Sauté Cook, and wages will be extremely competitive for those with the skills and passion we require in our Fine Dining, state of the art, restaurant.

Job Tasks Include but not limited to:

  • Preparing, seasoning, and cooks soups, meats, vegetables, desserts, and other food for consumption in restaurant and parties

  • Measures and mixes ingredients according to recipe to prepare soups, salads, gravies, desserts, sauces, and casseroles

  • Ensures that items are prepared according to recipes in a timely, efficient manner that prevents waste yet ensures quality and guest satisfaction.

  • Follows proper procedures in handling food to ensure health and sanitation guidelines are met.

  • Uses tools and equipment properly to ensure safety and avoid injury or damage to equipment.

  • Assists in unloading trucks that arrive with supplies, storing and rotating inventory.

  • Cleans work area, freezers, kitchen area, and dish area to ensure proper cleanliness is maintained.

SERVER

Vue Rooftop has an opening for an experienced server, with professional manner, and customer service experience for our Fine Dining, state of the art, restaurant.

Job Tasks Include but not limited to:

  • Presents menu, answers questions, and suggestively sells food and service.

  • Writes order on check or memorizes it.

  • Relays order to kitchen and runs food out to customers to ensure it is timely, hot and correctly prepared.

  • Garnishes and decorates dishes preparatory to serving.

  • Cards all patrons that appear to be under the legal drinking age and refuses to serve alcohol to minors.

  • Uses good judgment in not serving alcohol to intoxicated patrons.

  • Observes diners to quickly respond to any additional requests and to determine when the meal has been completed and ensure guest satisfaction.

  • Collects money for food and drinks served and accurately makes change using prescribed cash handling procedures.

  • Ladles soup, tosses salads, portions pies and desserts, brews coffee and performs other services.

  • Busses and sets tables in the restaurant according to standards, complete side duties as assigned and assists other wait staff as needed to ensure guest satisfaction.

  • Maintains a clean, organized and appropriately stocked work area.

Job Tasks Include but not limited to:

  • Sets up tables and break tables with required items according to property standards.

  • Prepares, organizes and pre-sets all non-entree items to be used during the shift, including condiments etc.

BARTENDER

Vue Rooftop has an opening for an experienced Bartender, with friendly demeanor in our Fine Dining, state of the art, restaurant.

Job Tasks Include but not limited to:

  • Takes orders from customers or server sand suggestively sells beverages/food to guests.

  • Uses a shot glass/jigger or automatic pourer to mix ingredients such as liquor, soda, water, sugar, and bitters to prepare cocktails and other drinks within recipe guidelines.

  • Uses good judgment in not serving alcohol to intoxicated patrons.

  • Ensures compliance with state laws by maintaining a "bar time" that is 15 minutes fast. Makes sure that all drinks are removed from the bar and tables by the state's legal time.

  • Cards all patrons that appear to be under the legal drinking age and refuses to serve alcohol to minors.

  • Serves nonalcoholic beverages, mixed drinks, wine, and draught or bottled beer in a friendly courteous manner to ensure guest satisfaction.

  • Collects money for food and drinks served and accurately makes change using prescribed cash handling procedures.

  • Orders or requisitions liquors and supplies.

  • Arranges bottles and glasses to make an attractive display.

  • Slices and pits fruit for garnishing drinks.

  • Replenishes bar snacks such as chips, pretzels, and nuts.

  • Cleans and maintains an organized work area.

Job Tasks Include but not limited to:

  • Presents menu, answers questions, and introduces wait staff.

  • Assists in maintaining proper seating times and flow.

  • Schedules dining reservations and arranges parties or special services for diners.

  • Greets guests, escorts them to tables, suggestively sells restaurant products and provides menus and beverages in a warm, friendly manner.

  • Maintains established standards with regard to table setting, organization of host station and cleanliness of the restaurant, servers' station, plate ware, flatware, and table service.

  • Assigns tables to waitstaff of dining room to ensure prompt and courteous service to patrons.

  • Tracks availability of tables, may assist in busing and resetting tables to speed up service provided to guests.

  • Prepares and serves beverages and expedites food orders.

DISHWASHER

We have an opening for a dishwasher.  We are seeking a person with a great attitude, and a strong record of attendance.  Career advancement options exist for the selected individual, and we offer many great benefits.  Dishwasher itself is normally a part time position, however we could also offer additional hours working in the hotel, or one of our on site restaurants.  This property is the home of Vue Rooftop, located on the 12th floor of the Hilton Garden Inn, and some shifts would be scheduled to work in the kitchen, doing dishes in Vue Rooftop itself. 

Job Tasks Include but not limited to:

  • Scrapes foods from dirty dishes and washes them by hand or places them in racks or on conveyor to dishwashing machine.

  • Washes pots, pans, and trays.

  • Inspects dishes for breakage and cleanliness prior to stocking on shelves for usage.

  • Sweeps and mops kitchen and storage room floors.

  • Cleans restrooms.

  • Washes kitchen appliances, worktables, walls, refrigerators, and meat blocks.

  • Separates and removes garbage and places it in designated containers ensuring all spills are cleared away.

  • Steam cleans or hoses out garbage cans.

  • Polishes silver using burnishing machine tumbler, chemical dip, buffing wheel, and hand cloth.

  • Transfers supplies and equipment between storage and work areas.

  • Washes and peels vegetables.

  • Loads or unloads trucks picking up or delivering supplies and food.

  • Helps support the kitchen staff with food preparation, plating and cooking as necessary.
